Vegetable Scones

It is a Boxing Day tradition in our house to make savoury scones with leftover veg from Christmas Day.

This is a simple recipe that uses leftover mashed vegetables and cheese to make a tasty scone – great served with (more) cheese or with a nice chunky soup (made with leftovers of course)!

Ingredients:
375g plain flour
3 tsp baking powder
1 tsp salt
350g mashed veg of choice (cooked)
50g grated cheese (cheddar or other hard cheese) – optional
Approx 250ml of milk (of choice)
To top: 1 small egg to glaze, parmesan.

Instructions:
1. Preheat oven to 220C
2. Mix all dry ingredients.
3. Add milk until it forms a soft dough
4. Use your hand to flatten out the dough using extra flour as required.
5. Use a cutter to stamp out the scones.
6. Glaze scone with egg and top with a little grated parmesan.
7. Bake until golden – around 12 minutes.
