Rainbow beetroot salad

Grated colourful veg with a light dressing.

This is a variation on a coleslaw, but I wouldn’t quite classify it as that as it doesn’t contain any cabbage. I have used light salad cream and lemon juice as the dressing here, but replacing the salad cream with greek yoghurt works well! Serve immediately, but does keep well for a day in the fridge.

Served here with some new potatoes.
