Hot Sauce
Chillies are coming on well in the greenhouse, but I still had a good amount of last year’s crop in the freezer. I decided to try and use these up and made a ‘hot sauce’.
Ingredients:
1lb of chillies
500ml malt vinegar
1 tsp of salt
Method:
1. Add vinegar and salt to chillies in a pan.
2. Bring to a boil and simmer for around 15 minutes.
3. Blend in a good processor.
4. Sieve seeds and solid components out to leave a thinnish sauce.
5. Bottle sauce in sterilised bottles.
6. Process for 15 minutes in a water bath.
Beware this will be VERY hot. I used a mix of chillies here including Cayenne, Apache, Jalapeno, Thai hot & Habenaro.
