Cheesy beans on toast ‘Allotment style’
Everyone loves beans on toast, but I have given this an allotment upgrade: Allotment beans in a garlic tomato sauce topped with a bit of cheese of your choice.
Radish pods added to this dish give it a bit of a bite. Quite an usual ingredient, but nice! I used canned tomatoes, but fresh would work well (still waiting for ours to ripen!).
Broad beans, runner beans and radish pods. Simmer until tender
(5 mins ish).Saute onions and garlic. Add tomatoes and reduce for 10 minutes. Stir in cooked beans.
Served on a crumpet with a bit of crumbled Cheshire cheese.
